Cajun Dirty Rice

Ingredients

  • 3 cups cooked rice
  • 250 g plant-based chicken pieces
  • 1 pepper diced
  • 1 onion diced
  • 200 g mixed frozen vegetabls
  • 200 ml vegetable stock
  • 2-3 tbsp cajun seasoning mix

Instructions

  • Heat the olive oil in a pan and add the onion. Sauté the onions until they are soft. Add the diced pepper and continue to sauté.
  • Add the mixed frozen vegetables and cook until hot through.
  • Set the vegetables aside and cook the vegan chicken pieces until cooked through. Add about 1-2 tsp of cajun seasoning (link again) to flavor the chicken pieces. 
  • Combine the cooked rice, cooked vegetables, and vegan chicken pieces in the pan and add the vegan beef stock. Add 2-3 tablespoons of the Cajun Seasoning (link again) and toss everything together and heat until piping hot.
